I was thinking I could make these but with nuts/pistacchios (and cardamom) instead of chocolate and use then to sandwich ice cream (or rose flavoured cream) for a more oriental feel. (I am totally blaming dear Saghar for this trend in my life right now,)
But also YES to packaged foods being a life-line for sensitive eaters. I'm down the 'ultra processed foods' rabbit hole at the moment (article coming in a few weeks) and this is one aspect of the conversation that people seem to gloss over (as well as accessibility).
I can't wait to read that piece, Laura. I admit it took me a while to let go of the processed foods fear but when I did, it opened my eyes -- and my eyes have been opened even further since realising that there are so many ways to feel good about food and feeding (accessibility, affordability, comfort, consistency, texture, fun, nostalgia, so much more!) and there is a place for all these things.
I’m with Mariu - ikea ginger cookies are the best - crunchy or soft the next day. I’m sad they no longer come in real cans but even in cardboard boxes - they are delicious. Must try your Chocolate chips next.

haha Saghar can have that affect on people! That sounds wonderful. I am a nut girl and love every kind of nut, pistachio would be so good!
