Yes!! Been talking about this with friends recently, Florence prices have gone up and up and up since the pandemic (not just hotels, rent in general too -- one of the reasons we had to move out of Florence). So sadly this is across the board. If you want somewhere less pricey though and are willing to go outside of Florence, Valdirose is amazing and so reasonable. Or come out to San Miniato! I have a whole separate list just for my town :)
We've got a wedding to go to so very stuck with locations - honestly whilst we're both excited to visit we would have waited until we have a bit more money to enjoy the trip with! It is interesting to hear that it is not just 'how things have always been' looking at placed to stay - honestly we're booking another trip simultaneously and if you lined up hotel quality Florence is at least double elsewhere we're looking...

I will admit that I had a bit problem finding restaurants in Noto of the kind I wanted (trattoria type) and with a 3 year old at the time! Lots of beautiful, fancy restaurants (and of course there is Caffe Sicilia) but I wish I could be of more help!
