What to cook on hot days

Inspiration from Puglia and Japan for the first heatwave of the summer.

I’ve been in Puglia for the past several days trying to keep cool over the same week that Tuscany has been in red alert for high temperatures (37°C or 98.7°F over the weekend). I think we can safely say summer has arrived — much to my disappointment.
