Don’t despair if you can’t get puntarelle (chicory shoots) — ten years ago you couldn’t get them even in Tuscany, I could only eat this delicious salad if I traveled down to Rome, where this dish hails from. Piano piano they have become readily available also here but you have to keep your eyes peel for it as the season is fleeting.
