Pomegranates & Artichokes cooking class with Saghar Setareh
The first of many (I hope) guest classes at Enoteca Marilu!
“In a parallel world, instead of calling this book Pomegranates & Artichokes, I would’ve named it Oh, the Glorious World of Stuffed Vegetables, as nothing showcases culinary affinities all the way from Central Asia to the heart of the Mediterranean quite like stuffed vegetables.”
This introduction that my dear friend Saghar Setareh writes at the beginning of the recipe to her savoury stuffed apples (filled with rice, split peas, walnuts, raisins, saffron and cinnamon) caught my eye because I happen to have a soft spot for stuffed vegetables — and this apple version is one that I am just obsessed with the idea of! Lucky for me she is bringing it to a cooking class at Enoteca Marilu!
This is such a beautiful cookbook, all photographed so artfully by Saghar from her home in Rome and elsewhere. I know how much time and effort went into every single minute detail of this book and you can feel and see it in this thoughtful and immaculate cookbook. I love how she connects the dots with stuffed things in particular — artichokes, tomatoes and eggplants — from Iran, through Türkiye and finally Italy; it is really fitting as a theme that celebrates this parallels and the journey from Iran to Italy recounted in Saghar’s new cookbook.

The class starts at 10:30am and goes until lunch finishes (if you’re coming from Florence there is a train at 9:38 that arrives at San Miniato station at 10:19am that would be perfect timing, see here for info on getting here).
Included is morning tea, cooking class, lunch with delicious natural wines and a copy of Pomegranates & Artichokes: Recipes and memories of a Journey from Iran to Italy, which of course you should ask Saghar to sign for you. It will be a small, intimate class of maximum 8 spots.
